Pickled Peaches

6 lbs. peaches 6 sticks cinnamon
8 cups sugar1 tbsp. whole cloves
1 qt. vinegar1 piece ginger
1 qt. water1/4 tsp. salt;
(May use all or part of spices called for; I like whole cloves.)

Boil water, vinegar, sugar, salt and spices (tie spices in a bag) for 10 minutes. Place peaches in syrup a few at a time, cook until tender to pick with a fork. Place in sterilized jars. Cover with hot syrup and seal.
